Above is a picture of my dinner tonight. It was yummy and a "complete meal"


2 packages of frozen spinach

2 tomatoes

garlic powder to taste

12 oz turkey breast chopped up

4 oz of olive oil

all heated to mix after the spinach was cooked

on top of whole wheat spaghetti

(serves 4)


I also am posting Stuffed pepper soup. I am going to post the original recipe that I have. I, of course, had to modify it slightly.


2lbs browned hamburger or turkey

2c diced green peppers (1 cup approx = 1 green pepper)

1 28oz canned tomato sauce

1 28 oz can diced tomatoes ( I used several fresh ones)

2c cooked brown rice

1/4c brown sugar

1 tsp pepper

2 tsp salt


Cook everything together but the rice. When peppers are tender add rice. Add water to thin to the consistency you like.


Add a salad with vinegar and oil and you have yourself another complete and quite filling meal!


I have not made the recipe below but I found it recently and bought the cabbage.


Unstuffed Cabbage Soup

(2-3 servings)


1/2 lb lean ground beef

1/4 c onion chopped

1c brown rice, cooked

2c cabbage shredded

1 tbs cider vinegar

8oz tomato sauce

1/4 caraway seed (optional)

pepper (to taste)


Oven 350

Brown meat, grain grease

spoon meat into a small nonstick casserole dish and top with onions, then rice and then cabbage.


In a small bowl, combine vinegar, tomato sauce and pepper


Pour liquid over meat mixture

Sprinkle with caraway seeds

Cover and bake 30-45 min

  1. I love stuffed pepper soup! Maybe I'll give that a try, but with 1/2 the rice in it. The other soup sounds very good too. Let me know how that one turns out.

    I'm a big fan of chili, and the South Beach Diet has a ton of good chili recipes in it. They are all lean, low-sodium, packed with protein and good fiber. My favorite is a Turkey and White Bean Chili. It isn't a white chili though.

    1 lb Turkey Cutlet, diced (I used 1lb ground)
    1 can of Cannelloni Beans, drained
    1 can Diced Tomatoes, mexican/spicy kind
    1 Cup low-sodium Chicken Broth
    1 Medium Onion, diced
    2 Tbsp Olive Oil
    2 Tbsp Garlic, chopped
    1 Tbsp Chili Powder
    1 Tsp Cumin
    Salt and Pepper, to taste

    I add the following ingredients to the chili
    1 Large Green Bell Pepper, chopped
    1 more Tbsp of Chili Powder, a different blend
    1 Tsp of cayenne pepper
    1 Tbsp Cilantro or Parsley
    1 Tbsp Oregano

    Saute Onion & Green Pepper in Olive Oil for 5 minutes, or until translucent, over medium high heat
    Add Garlic and Saute for 2 more minutes
    Add the spices, and the turkey. Cook until the turkey is browned
    Add the drained beans, diced tomatoes and chicken stock. Stir to combine, and simmer over low hear for 15-20 minutes, stirring occasionally, and seasoning with S&P.

    I usually simmer this for an hour to an hour and
    a half. It tastes better to me with more time on
    the stove. I add more chili powder during this
    time too. I like a spicy chili, with a strong
    flavor.

    A pretty basic recipe, but very healthy and a
    staple of my diet anymore. I just serve it with
    some 2% Milk Shredded Cheddar Cheese sprinkled
    on the top. Holds up well, and microwaves just
    fine.
